Homemade Spinach and Ricotta Ravioli with Sage Butter Sauce

So if you’re a pasta lover you will absolutely love this dish!! If you own a Thermomix, whatever version it is, you can easily make this. I followed the Spinach and Ricotta Ravioli recipe off the Cookidoo platform, It’s amazing! Fresh pasta made with fresh spinach, no nasties whatsoever, and the filling is made of delicious hard cheese (recipe calls for Parmesan but I use Pecorino because it’s cheaper!) Shallots, Butter, Spinach, Ground Nutmeg and of course Ricotta! The most time consuming part is rolling and filling the pasta, but once you’ve got the knack of it it’s fast and easy. Little tip, flour your ravioli tray before you put the pasta in. (The first time I made this I didn’t do it and spent ages peeling it out!!) Anyway......Ravioli done, before you boil your salted water to drop the ravioli in, in a frying pan melt down some butter, simmer with vegetable stock and sage, and reduce it right the way down. Once It’s reduced enough, cook your ravioli and drizzle your sage butter over the top. Amazing!!!! It’s a great recipe that you could make in advance and finish off within minutes if you had guests. I think it would be a great starter!!!
